Two Quick Dinner Recipes with Campbell’s

Evenings here in the Artsy Family can get a little crazy, especially at the moment. Between getting ready for our upcoming move and having rehearsals for Shrek the Musical every night, I barely have time to breathe, let alone make a delicious home cooked meal for my family. I’m no great chef to begin with, so recipes that call for a long list of ingredients and take all day to make don’t even get attempted around here. I’m always looking for quick, affordable, and easy meals my family can enjoy.That’s why when I heard about the new Campbell’s Soups for Easy Cooking, I thought they’d be just my style.

These pourable, ready-to-use soups come in cartons and can be used to create your own homemade recipe in 30 minutes or less! They’re available in four varieties:

  • Savory Portobello Mushroom (great for skillet dishes)
  • Creamy Herb & Garlic with Chicken Stock (perfect for pot pies)
  • Sweet Onion (a savory addition to meatloaf and skillet dishes)
  • Mexican Style Tomato (great for Mexican dishes)

I decided to experiment with them and see what kind of simple recipes I could create. Here are two I came up with that I thought you might enjoy. Both are inspired by favorite meals of mine at restaurants. They take less than half an hour to make and only call for a handful of ingredients.

Chicken and Gnocchi Soup

Chicken Gnocchi Soup

1 carton Creamy Herb & Garlic with Chicken Stock
1 1/2 cups milk
1 package potato gnocchi
Cooked, cubed chicken
fresh spinach

Prepare gnocchi according to package directions. {The brand I used simply needs to boil for 3 minutes.} Combine chicken, gnocchi, spinach, milk and Creamy Herb & Garlic with Chicken Stock and bring to a boil. Reduce heat and simmer until ready to serve.

French Onion Soup

French Onion Soup Recipe

Ingredients:
1 carton Campbell’s® Sweet Onion Soup
1 can Campbell’s® Condensed Beef Consomme
2 yellow onions, sliced and cut
2 T butter
1 tsp sugar
1 small French baguette, sliced crosswise into 1/2-inch pieces
Gruyere cheese, grated {or you can substitute slices of Provolone cheese}

Melt butter in a saucepan over medium heat. Add onions and sprinkle with sugar. Cook for 15 minutes, stirring occasionally until caramelized and brown.

Combine the Sweet Onion Soup and Beef Consomme, along with 1 1/4 cups of water and bring to a boil. Reduce heat to low. Add the caramelized onions and simmer while you prepare the bread.

Lightly toast bread under a broiler; set aside. Transfer hot soup into ovenproof bowls and place on a baking pan. Place 1 or 2 slices of toasted bread over each bowl of soup. Sprinkle grated cheese on top of each slice of bread. Place the baking pan under the broiler until cheese melts and starts to become crusty brown around the edges.

  1. I’ve been wanting to make Olive Garden’s version of Chicken Gnocchi Soup forever and just haven’t done it…but this one is so simple!! I definitely will make it soon!! 🙂
