Turkey Caprese Sandwich

With the new school year starting, many of us have been focused on what we can pack in our kids’ lunches that’s both healthy and something they’ll actually eat. But let’s not forget about our own lunches, mamas!  Now that we’re not being pulled in a hundred directions by hungry kiddos who all want different things, we can actually take the time to fix something that’s just for us! Today, I want to share with you one of my favorite fresh and flavorful recipes, a Turkey Caprese Sandwich.

Ingredients:

Ciabatta Bread
Smoked Turkey
Fresh Mozzarella
Tomato
HemisFares Genovese Pesto

Traditionally, caprese refers to a combination of tomato, mozzarella, and basil. To give this sandwich a little extra burst of flavor, I like to use HemisFares Find No. 50: Genovese Pesto in place of plain basil. The recipe, a mixture of Genovese basil, olive oil, cashews, pine nuts, cheeses, and more, was found in the notebook of a grandmother from the Piedmont region of Italy. Now, you can bring it into your own kitchen by finding it at your local Kroger store.

Building your sandwich

Slice a ciabatta roll or a sandwich sized piece of ciabatta bread. Add smoked turkey {I use about 4 slices} and sliced mozzarella. Top with fresh tomato slices.

Finally, add 2 to 3 T of Genovese Pesto.
